    3-Acetyl-6-methyl-2H-pyran-2,4(3H)-dione, commonly known as dehydroacetic acid (DHA), is a heterocyclic compound with a pyrone structure. It is a white to off-white crystalline powder with a pKa of approximately 5.3, exhibiting weak acidic properties. Its primary industrial application is as a broad-spectrum preservative, effectively inhibiting the growth of molds, yeasts, and bacteria. In the food industry, it is often used as its sodium salt (sodium dehydroacetate) to preserve processed foods, beverages, and baked goods. In cosmetics and personal care products, DHA serves as a preservative to prevent microbial contamination, typically used at concentrations up to 0.6%. Its mechanism of action involves interfering with microbial cell membrane function and enzyme activity. While effective, its use is regulated in many regions due to potential toxicity concerns at high doses.
