It is a clear, viscous, sweet liquid. Its primary application is in the food industry as a versatile ingredient. It functions as a sweetener, humectant (to retain moisture), texture modifier, and bulking agent. It prevents sugar crystallization in confectionery, provides body to beverages and frozen desserts, and enhances browning in baked goods.
