It is a colorless to pale yellow liquid with a strong, sweet, floral, and slightly balsamic odor reminiscent of hyacinth and lilac. It is a member of the aromatic aldehyde family. Its primary and most significant application is as a fragrance ingredient and flavoring agent. Due to its pleasant and persistent floral scent, it is widely used in the formulation of perfumes, cosmetics, soaps, detergents, and household products. It is also employed as a flavoring substance in food products, contributing to fruity, sweet, and nutty notes. Industrially, it serves as a key intermediate in organic synthesis, particularly for the production of other fragrance compounds, pharmaceuticals, and fine chemicals. For example, it can be hydrogenated to produce hydrocinnamyl alcohol or oxidized to hydrocinnamic acid. Phenylpropionaldehyde should be handled with care as it may cause skin and eye irritation.
